
So this looks pretty much like a familiar enchilada or something, right? Nope - it's filled with tofu. And in my opinion, there is nothing familiar about tofu. I can't say I loved this meal. But Jon and our friend liked it pretty well. I'm glad there was cheese to help cover the tofu-ness.

This is the lovely bean/mushroom/onion burger Jon made on Wednesday night. It looked good. It smelled good. But neither of us were crazy about the taste.
I think I'm actually having more fun plating the food and taking pictures of it than I am eating it. But hey - it makes the whole experience a little more enjoyable.

come to phoenix, i will buy you guys proper burgers and enchilladas. i am proud of you but am hungry when i think of you two. serious props to jon for trying this with you, and cooking too. chris would probably leave me if i told him he couldn't eat meat for a month. i mean, he would leave me for a month...
Well the presentation certainly is pleasing if the taste isn't!!! It sure looks good to me!
Bill makes awesome vegetarian curry with chickpeas and lentils. Absolutely fabulous! Try something like that maybe.

Food looks good! We eat vegetarian a lot because the meat here is quite nasty. Keep going, you can do it. Try a vegetable or minestrone soup or chili. Do you want to come and plate our food?
